Creamy Mushroom Spinach Pasta with Grilled Chicken by Sheeba Desouza

Savor the deliciousness of grilled chicken in a creamy mushroom and spinach sauce. With every bite, enjoy the perfect balance of tender chicken, rich creaminess, and hearty veggies. It's a comforting and fulfilling dish that's sure to delight your taste buds and satisfy your hunger.

Ingredients

For the grilled chicken
* 4 boneless, skinless chicken breasts
* Salt and pepper, to taste
* Olive oil, for brushing

For the creamy mushroom and spinach sauce:
* 2 tablespoons butter
* 1 tablespoon olive oil
* 8 ounces mushrooms, sliced
* 2 cloves garlic, minced
* 1 cup chicken broth
* 1 cup heavy cream
* 2 cups fresh spinach leaves
* Salt and pepper, to taste
* Grated Parmesan cheese (optional, for garnish)
* Chopped fresh parsley (optional, for garnish)
* White wine (optional)- 1-2 tbsp

Instructions:

* Season the chicken breasts with salt and pepper on both sides.
* Brush the chicken breasts with olive oil to prevent sticking.
* Grill the chicken breasts in a grill pan for about 6-8 minutes per side, or until they are cooked through and have nice grill marks.
* In a large skillet, heat the butter and olive oil over medium heat.
* Add gralic,sliced mushrooms to the skillet and cook until they are golden brown and tender, stirring occasionally, for about 5-7 minutes
* Pour in the chicken broth and heavy cream, stirring to combine. Allow the sauce to simmer for a few minutes until it starts to thicken slightly.
* Stir in the fresh spinach leaves and let them wilt in the sauce. Season with salt and pepper to taste.
* Place the grilled chicken breasts on serving plates and spoon the creamy mushroom and spinach sauce over the top.(reserve some sauce for the pasta)
* Garnish with grated Parmesan cheese and chopped fresh parsley, if desired.
* In a pot, boil water , and cook the pasta until it’s al dente. Once done transfer it in in a pan, add the creamy mushroom and spinach sauce a lot with a little pasta water and coat it well.
* Serve the grilled chicken with creamy mushroom and spinach sauce hot, alongside this delicious pasta and enjoy.
